The carb swap should be straight forward, and the 600 Is really a decent size with a mild 350. For the cam, with that Many miles I'd look at the whole valve train and assess wear very critically prior to putting in a new cam. You don't mention what cam grind your looking at but I would recommend a mild rv cam.

I bought an in-line electric fuel pump that only puts out 4.5gph so no need for a regulator. Using a blazer tank mounted where the spare tire was, in-line pump and fuel line is all I have now.

Then change the fuel pump out for something meant to give the 2-3 psi you will need at the carb. The original fuel pump should be pumping close to 22psi, way too much. It willl just flood the carb till gas comes out of your air filter in about 6 seconds. OK so sounds great, but there are issues with this plan.
