Back in the day HBO was like the top for movies and other content. As of Nov 22nd, serious issues w/ app still exist; I can’t get through 15 minutes without HBO Max app shutting off.

The absolute fastest way I've found to restart an episode is to open up the episode in the smartphone app. Use your finger to swipe it back to the start. Start playing it then stop it. Then reopen the episode in Hulu on the Firestick. Not at all efficient but faster than rewind.
